Red Currant Cordial


  • Weigh red currants (or other berries)
  • Water at same ratio as currants/berries (1g:1ml)
  • Caster Sugar at half ratio as water (1ml:2mls)
  • White Vinegar


  1. Clean currants/berries and take out any sprigs, leaves etc
  2. Add currants/berries and water to pan
  3. Bring to boil and simmer for 15 minutes
  4. Strain into a bowl using a colander and muslin cloth/bamboo sheet
  5. Pour liquid back into pan and add caster sugar
  6. Bring to boil and simmer for three minutes, add one splash of vinegar for each kilo of currants/berries
  7. Pour into hot washed bottles, cool to luke warm temperature and add mint sprigs
  8. Leave until room temperature, seal and store

There will be leftover berries and seeds that can be made into syrup and jelly or just thrown away (into the compost or given to the chickens).
