Chia Seed Pudding

I am addicted to this delicious and healthy pudding. Add berries for a summer dessert or bananas, shredded coconut and cinnamon/nutmeg for a comforting treat or raw cocoa for a decadent option.

Delicious Chia Seed Pudding



  • 2 x 400ml cans of organic coconut cream
  • 2/3 of a Cup of Chia Seeds
  • 1 Vanilla Pod (scraped) or equivalent
  • Sweetener to taste (I use Stevia)


  1. Shake cans of coconut cream and pour into bowl/casserole dish
  2. Add vanilla and sweetener
  3. Slowly add chia seeds, stirring constantly so it doesn’t clump
  4. Place in refrigerator and allow to set overnight
  5. Garnish as desired
