Season’s Greetings Green Foodies!!!

 

It has been a hectic few days, and as per tradition we ate way too much!!!   The food was amazing and I wanted to share with you how to have a vegetarian/vegan Christmas without too much fuss.   As my household is a blend of meat eaters and vegos, a feast was needed that would cater to us all without extra work….so the very excellent man of my life cooked and created this very delicious menu:

 

  • Pork belly and crackling (obviously vegos avoid this one :b)
  • Stuffed Portobello mushrooms (meat replacement)
  • Rosemary and lemon roasted potatoes
  • Caramelised carrots
  • Green Beans with olive oil and pepper
  • Warm, soft bread rolls
  • Organic wine

Also, I found some delicious vegan recipes (thanks to the KORA organics blog- http://www.koraorganics.com/) for traditional beverages such as the Eggless Eggnog and a great one for the kids – The  Candy Cane Steamer (See recipes below).

Before I continue with the recipes, just a little side note about shopping at a small family owned business for organic groceries: We were doing our final shop at Sprout (http://www.sproutonline.net.au/)  before Christmas when the owners came out and thanked us for our business throughout the year, then presented us with a large bag of lychees and wished us a Merry Christmas.  They were handing them out to all of their regular customers.  The warm glow that was engendered with us from this small act of appreciation and kindness speaks volumes of the care and sense of community that comes with small businesses.  Just another reason that grassroots companies are the best!!!

Here are the recipes…try them, they are awesome!

Candy Cane Steamer

  • ¼ cup filtered water
  • 1 cup unflavoured hemp, soy or rice milk
  • 1 ½ tbsp cacao butter (shaved)
  • 3 drops peppermint extract
  • 1 ½ tsp agave
  • ¼ tsp vanilla extract

HEAT ALL INGREDIENTS IN SAUCEPAN UNTIL CACAO BUTTER ENTIRELY MELTED. BLEND AND SERVE!

Eggless Eggnog

  • ½ cup almonds (soaked overnight)
  • 1 cup coconut milk
  • 3 dates (pitted)
  • 3tbsp agave
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cloves
  • 3 cups filtered water
  • Rum

BLEND UNTIL SMOOTH. STRAIN THROUGH FINE SIEVE. POUR INTO CUPS WITH A NIP OF RUM AND SPRINKLE NUTMEG.  SERVE WARM OR COLD. (I served it warm…. and it was delicious.  My daughter had it too minus the rum and loved it).
