Vegan Macaroni and Cheese

Hi Green foodies,

This is the first post with my and my family’s favourite vegan dishes.  My daughter and partner both really love this dish.  It is quick, nutritious and delicious!


  • 3 cups wholemeal spelt penne pasta
  • 1 cup almond milk
  • ¼ cup Braggs All Purpose Seasoning (liquid)
  • 1 cup savoury nutritional yeast
  • 1 tsp smoky paprika
  • 1 clove garlic
  • 1tsp Dijon mustard
  • ½ cup olive oil
  • Salt and Pepper


  • Cook pasta
  • Blend the other ingredients until it is liquidised
  • Heat the sauce on med-low and mix in the cooked pasta


I like to add chilli flakes to mine for extra kick as well as to boost the metabolism.  Also, the dish tends to solidify as it cools, so eat it warm. If you want to eat it as leftovers the following day,  add a splash of almond milk and re-heat it on medium, stirring regularly, to regain the creaminess.
